I have always wanted to build with straw bales. I have fantasies of growing it in a field or even a city park one year and then changing that horizontal fluidity into vertical stability, infilling a mid rise commercial or multifamily building with bales.
Black Ankle Vineyards has enviably expanded their magic trick of turning sun rain and soil into things we love (red and white) into the realm of architecture. See images of the Tasting Room construction here.
